Sometimes its hard to fill up and stretch your dollar at the same time. One thing that can often do both is carbs.
Pancake mix is probably the most useful, as it can be transformed into so many other things.
To see how much it would cost, I went to Aldis and got a box of just add water pancake mix for $2.99( not including tax)
So what can you make that is very versatile, but does not require anything more than pancake mix and water? Lets take a look at three of my favorite!
Pancakes

To make:
1 cup pancake mix
3/4 cup water
- Mix water and pancake mix slowly until just combined.
- Heat up a griddle or frying pan on medium heat and grease with butter.
- Add 1/4 cup or less at at a time to make your pancakes (depending on the size you want)
- Once the bubbles in the batter stop disappearing you will want to flip(about a minute) wait 30 seconds to 1 minute for the other side to brown.
- Remove from pan.
- Add as much or as little, or even no toppings to finish off your breakfast!
Crepes

To Make:
1.25 cups pancake mix
1 cup water
1.pour pancake mix into a bowl and gradually add water until a thin consistency is achieved. It needs to be thinner than pancake mix. Do not stir fast.
2. Heat up a large pan or a specialize crepes maker. Grease with butter.
3. Add 1/4 cup pancake mix to pan and quickly spread out in a circular motion until a giant circle is achieved. You will need to work fast, as it cooks quickly.
4. Once it is cooked and edges are slightly lifted, carefully use a flat wooden tool or spatula to remove the crepe and flip.
5. Fold in half, then move the corners into the middle to make a triangle. Remove from heat.
6. You can eat the crepes as is, or get creative! This dish is so versatile that you can make sweet, savory, etc with whatever ingredients you have. I made savory when trying this recipe by adding left over jack cheese and deli meat I had in the pantry. If you are going to add ingredients into the middle of a crepe, add them before folding, but after flipping.
Muffins

To make:
2 cups pancake mix
1.5 cups water
- Heat oven to 350 and set aside.
- Grease or line muffin tins. Set aside.
- Put pancake mix into a bowl. Gradually add water until you achieve a slightly thick consistency. You will want it to be similar to a pancake batter consistency.
- If you have any random ingredients lying around, this would be the time to add to the mix. I like to add left over dried fruit, or chocolate.
- Fill muffin tins a little less than halfway.
- Bake in oven for 17-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
