Low Carb Chocolate Chip Cookies

INGREDIENTS

1 cup salted butter

1 cup Granulated Monkfruit Sweetener

1 cup Swerve Brown Sugar, packed

2 teaspoons vanilla extract

2 large eggs

4 TBS water

3 cups Carbalose flour

1.5 tsp Baking soda

1 tsp baking powder

1 tsp salt

1 bag Lily’s milk Chocolate chips(9 oz)

INSTRUCTIONS

  1. Preheat oven to 350*F.
  2. Mix Carbalose, baking powder, and baking soda and salt until combined.
  3. Soften butter in microwave, do not melt.
  4. Mix together the granulated Monkfruit, Swerve Brown Sugar, and butter.
  5. Add eggs and vanilla. Mix until light and fluffy(1 minute by electric mixer, 2 or so by hand mixing)
  6. Add wet mixture to dry mixture. Mix until just combined.
  7. Slowly add four tablespoons of water. Mix until just combined
  8. Add in chocolate chips and stir.
  9. Line baking sheets with parchment paper.
  10. Press and roll pieces of cookie dough into the size of golf balls. Place on cookie sheet.
  11. Cook each batch for 13 minutes or until golden brown.
  12. Let cool for 10 minutes, then enjoy!
